Go to Products > Merchandizing. Use the select box at the top of the merchandizing page to choose the category or other archive to provide a sorting order for. Drag-and-drop your products to sort them as you require. Click the Save Changes button to save and publish the changes.

As the admin user, go into your WordPress site and go to the Dashboard. Click Appearance Menu > Theme Editor Menu from the Dashboard menu. Look for the theme functions file on the Theme Editor page to add the function that will eliminate the default sorting drop-down in the WooCommerce Shop and Archive pages.

You can go to the Customizer → WooCommerce → Product Catalog to set the initial sort order of products in your online store using the WordPress Customizer. You can choose default sorting (custom ordering + name), popularity, average rating, most recent, and price.

Add a manual order in WooCommerce Mouse over + New in the WordPress Admin bar and click Order. You can do this from the WP backend as well as from the frontend. Go to WooCommerce → Orders and click the Add order button. When editing any order click the Add order button at the top.
